This Costa Rica is a Black Diamond Natural aerobic process from Oscar and Francisca Chacón at the Las Lajas Micromill.
This sweet slightly fermented coffee results in a complex highly enjoyable cup. Best enjoyed while listening to the Lumineers and wearing a five panel hat.

The Black Diamond process is a slow process similar to their natural process but takes between 15 - 22 days. The beans dry on raised beds for one day and then are moved to the drying patio for the remainder of the process where they are constantly checking temperature and moving the beans to prevent them from getting heated. With the Black Diamond process they look to obtain a sweeter, more clear, and bright coffee.
